Assoc. Prof. Dr. Enes DERTLİ

Enes DERTLİ received the PhD degree in biological sciences (2014) from University of East Anglia, Institute of Food Research (UK). He is currently working as an Associate Professor at the Food Engineering Department of Yıldız Technical University, İstanbul, Turkey. His main research interest is the Lactic Acid Bacteria (LAB) and their metabolites, particularly exopolysaccharides (EPS). His group aims to identify novel EPS structures produced by distinct LAB strains and to understand the role of these EPSs for the probiotic roles of LABs as well as for the technological functions of EPSs. He actively participated in several national and international projects, and in most of them, he worked as the PI of the projects. He is the author of more 80 papers published in SCI-indexed journals with an h-index of 22 (July 2021).

Professional experience:

Lactic Acid Bacteria (LAB) and their metabolites,

Structural characterization of Exopolysaccharides (EPS) and determination of their technological and functional roles

Development of EPS based nanoparticles

Identification of LABs from distinct niches including bee products

Microbial diversity analysis of different fermented products

Probiotics and understanding their mode of action

Current research interest:

Identification of novel glucansucrase and glucanotransferases

Development of novel glucansucrase-based prebiotics

Development of modified starch using a 4-6-glucanotransferase

Development of novel antimicrobials for food applications
