with 21 Chapters to be published by Springer Nature, the editors are looking for expressions of interest to author the following chapters from three countries:

  • Chapter 6. Traditional breads from France.
  • Chapter 13. Traditional breads from Malta, the “Il-Hobza Maltija”.
  • Chapter 14. Traditional Scandinavian breads.
