Chapter 14. Applications of sourdough in animal feed. The Chapter 14 will discuss the incorporation of enzymatically hydrolysed cereals or sourdough as a source of nutrients and microbes in animal feed and the effect of these fermented food products on animal production systems.
Any expression of interest should be given by replying to this email until the end of this week (Sunday, 31st January 2021) The Table of Content of the Book is attached. The main/corresponding author will be free to choose other co-authors for the chapter (with approximately up to 13,000 words) and to define the content of the chapter in agreement with its aim. The delivery date for this chapter was extended to 30th June 2021. The author’s guidelines will be provided later on as well as other pertinent information.
